Is there a way I can just click the name of an address book and have it populate all the emails in the new message? Do I have to select each individual email every time?

I have a list that is 200 people, and rather than highlight all 200 emails, I'd rather type in the name of the address book and Thunderbird populate.

Not exactly, but try this: open Address Book and create a new mailing list, name it and then close it, then select the contacts in the parent address book (Ctrl+A to select all), then add the contacts to the list by drag and drop onto the list icon. To send to the list, start entering the list name in the To: box and autocomplete will show it.

Bear in mind that your mail provider might limit the number of contacts in a message, so you might have to create two or more lists.
