I am using the webmail, and have configured it in "Copies & Folders" to place a copy of sent mail under the correct email. There is no "sent" mail folder appearing at all under the mail folder.

I also cannot see sent mail from my phone (I'm actually trying to find an email that I sent from my phone, and was hoping it would be revealed in Thunderbird).

I am using POP.

Any help is appreciated!

With POP your Sent folder is always local, not on the server. If you want to see the Sent folder on the phone, you'd need to set up your account in Thunderbird as IMAP.

Thank you, @christ1 -- I sort of figured that was the issue. Does this mean I will never be able to find my sent email?

You'll need to set your local Sent folder for your account as the one to get a copy of your sent messages. You can do that in your Thunderbird Account Settings. That won't let you see your sent messages on the phone though, unless you set up your account as IMAP on both devices.
