So I "Upgraded" to the new sync and ofcourse the old one cannot be logged back into nor can I use the email from my previous account as a firefox account to login and do it from there. Is there a way to securely erase all of my data associated with my old sync account after September 30th,

Are you talking about data stored on the old sync servers or data that is synced to other connected devices?

The old Sync servers have been closed down, so this data is no longer present and could only have been accessed with the correct Sync key.

Yes the old data stored on the old sync servers. I understand the old sync server was shut down but if I were to "Sync" my old account I can still download my data from the previous account with the correct sync key ofcourse. I want to delete the old account data from the old sync 1.x servers along with the account.

The old Sync servers have been taken down, so I assume that data stored on them will be wiped off their hard drives.
