I know that Thunderbird blocks remote content but it makes me uneasy to see formatting and pictures in the junk ail display pane.

Correct. It is also largely pointless as Thunderbird "sanitizes" the HTML it renders and does not run any scripts.

'View' > 'Message Body as' >' Plain text' If you have the 'Menu Bar' enabled, press 'Alt' and hold whilst selecting 'V' then 'B' then 'P'

Also suggest you switch off 'Display attachments Inline' and only use it when required. 'View' > uncheck 'Display attachments Inline'

then select Junk folder.

Currently there is no automatic setting which by default sets all Junk as only viewable as Plain Text.
