select an email. Press 1. Now it is tagged important and coloured red.

If you do not like the colours chosen you can always right click the entry, select tag from the menu and then the manage tags entry to set you own highlight colour for a category.

So to better clarify. I want to be able to high lite the ENTIRE email exactly like when you select a line of text for cropping and it appears encased in a block format. As an example select this line of text as if you were going to copy it, notice how the entire line of text is blocked? This is what I want to do yet by using Tag and to keep it highlighted.

I know of nothing like that. There was an add-on back about version 1 but it was never updated by it's author
