I am new to Thunderbird. I am using Spell Checking and have downloaded some other languages. But doesn't the Spell Checker change the first letter of a sentence to a capital letter? Are there rules they use?

No, that is grammar rather than spelling.

There was an AutoCorrect add-on that does what you ask, but I always found it limited and restrictive. It insists on doing amendments in inappropriate places (such as e.g. and i.e. and example.com) and can't be adjusted. Besides, it is not actively maintained and I couldn't be sure it still works.
