Why does the Activity Manager in Thunderbird not show outbound messages
The Activity Manager seems only to be recording details associated with inbound messages. How can I get it to also show outbound and in particular which SMTP server was used

The SMTP server you specified in your account settings is the one being used. What is your problem in the first place?
I am trying to chase a historic query and need to see which server was used as I have 2 and regularly switch between them depending on location and which one is working....
I don't think Thunderbird maintains a history of send transactions. Your best bet may be to check with your email provider(s) for their server logs.
