V115 changed significantly how it looks and how the menus work. Which is now interfering with the way I work. How do I revert to the previous v102 appearance?

Previously, I had the Thunderbird window in one corner of my screen, and all the toolbar controls that I use could be seen. Now to see all the toolbar controls that I use, I have to have the Thunderbird window twice the size. How is this an improvement?

Also, why do you push a version update and not update the help information to the new version?

First, there is no official support for reverting to a prior version, and the process is known to be somewhat problematic. Before proceeding, I encourage you to do a full backup. Here are the steps: Try:

   Exit Thunderbird if running.
   click windows key and 'r' key
   Enter: thunderbird.exe -P --allow-downgrade
   click on 'OK' 

My suggestion is to stay with 115 and work through the various settings to see if you can find a workable approach. Can you post a screenshot of a 102 setup or somehow show in graphics what your setup was?
