I just discovered a bunch of installed extensions in the list I don't recognize, including numerous I definitely would not be interested in. Is this the way Firefox android works?

That is up to the Addon developer to submit their Addon to be listed on Firefox Addon page. Whether or not you like the Addon isn't your decision to make. If you don't like the Addon then don't install it.
