I am new to Thunderbird and have a M1 Mac mini, macOS is 11.3 Big Sur.

I am using the Beta version 89.0b1. Although not a release version, it is stable, and only the Beta works with Apple Silicon.

The issue is the text in From, Subject, and To fields are all dark, so I can't read them. This is the only issue holding me back from adopting Thunderbird on my M1 Mac Mini. I prefer dark mode.

Tried changing font colors, no success. I tried different themes without success. The button text for Reply, Forward, ... are also dark.

Any ideas on what to do next to make the text in the message header light colored so that I can read the text? see the attached image

Will probably be fixed next week. You are seeing https://bugzilla.mozilla.org/show_bug.cgi?id=1707273 Until then, avoid dark mode.

Was release totally broken when using M1?

Thunderbird Release 89.0b1 (64-bit) running on M1 Macbook Air has been great. For example, I cleaned out one of my mailboxes that had 2200+ messages and got the mailbox under control, less than 200 messages. I used my M1 Air with 89.0b1 (64-bit) to do this, and Thunderbird did not crash.

It's important to see the From, Subject, and To fields in the message header in Dark Mode. The buttons Reply, Forward, ... are not important to fix, I can memorize what they are by position. Thanks you for all the effort porting to Arm64 Apple Silicon.
