Per the title; I choose that feature under the Extensions & Themes tab but at a later date when I go back in there I see Available Updates shows on left side telling me there are X number of extensions availble to be updated and the have a blue dot on them indicating update available.

Is it correct then that "Reset all add-ons to update manually" means only the physical update is to be done manually but the browser will still connect on it's own and check for update without permission? Or is there user error here. I thought I had all telemetry disabled as much as possible; is there a way to stop it from checking for updates until manually done? Under browser updates I have selected; Check for updates but let you choose to install them; if that matters. Thank u.

Browser updates and add-on updates are two different things, which use two different settings.

For both of those updates, Firefox will check and find the updates automatically so that it can let you know when they are available, but it won't actually install them unless you have them set to automatic.

In the add-ons section, you can press the gear icon and enabled/disable the Update Add-ons Automatically option to control whether or not the updates are automatic. It can also be set on a per-addon basis from the Details tab of the add-on that you want to control.
