I want to use a couple things from the symbol font but it is not available when composing an email. How do I add this font? Thanks.

The Symbols font is installed, I can choose it in Character Map, Wordpad, and other applications; just not in Thunderbird.

That is correct. Some fonts are just not suitable for use in HTML. I think this page explains the problem. http://www.alanwood.net/demos/symbol.html

As you will not be able to use the symbol font. Did you try the symbols already mentioned? Or more to the point, what symbol are you missing that you want to use.

On W10, Windows key + . shows the Emoji, Kaomoji and Symbols that you can insert in a message. Do you find the ones you want under Symbols?

I really want to add the Symbols font (or any other supplied Windows font). When I compose a message there are lots of fonts like Arial, Calibri, Tahoma etc available in the Insert menu. But no Symbols font.

Is the Symbols font installed in Windows Settings? You can also use Insert/Characters & Symbols in an html message.
