But what is your font and are you trying to use legacy code-pages for German instead of Unicode?

Using a font that the recipient does not have is one of the common issues with anything but plain English ANSI characters. HTML uses a font family so if you specify a font that the recipient does not have the family will be used as a fallback and that can get very messy and ugly.

W3C schools suggest using these fonts where possible https://www.w3schools.com/cssref/css_websafe_fonts.php
