After I responded positively to a notice offering to update my Thunderbird account... I keep getting a window asking whether I want to allow "Thunderbird Software Updater" to make changes to my device.

I always get very cautious and suspicious when asked about giving permission to make changes to my device... I've been burned in the past by such requests.

How can I be sure this is really a legitimate request from Thunderbird/Mozilla?

Given the updater is a part of Thunderbird and to install an update it must make changes to our device (update Thunderbird) I think you need to just accept that you will be asked and should approve it.
