why do these odd symbols appear in my emails _ you’ve
All punctuation in my emails appears with nonsense symbols. you’ve , ever – so, yourÂ, itÂ, how do I stop this and replace it with proper punctuation?

This is common when messages are pasted from word processing packages.
Email used UTF-8 unfortunately many favored fonts used by folk are not UTF-8 so when it comes time to render their mail they get rubbish replacements for the things not supported.
Some relief can also be found in changing the character encoding. View menu (alt+V) > Text encoding.
