how can I insert symbols/wingdings in the body of a thunderbird message?
Symbols & wingdings are not available fonts.

Many Characters and symbols can be located here: In a new Write message.
Insert > Characters and Symbols choose category select the character click on 'Insert'
re: 'Wingdings' fonts. Support for non-standard Microsoft fonts was removed a long time ago. Thunderbird is designed to comply with Internet standards so that your messages can be read on a wide variety of systems and devices.
The 'Formatting Bar' does allow for inserting a variety of smiley faces. This should be auto enabled if using HTML. View > Toolbars > select :Formatting Bar
If you recieve messages that have odd 'J' in text due to sender using a particular MSWord font, you could use this 'Smiley-Fixer' addon to help to fix some rendering.
