I sometimes receive email, forward it, and find that forwarded message has **SPAM** inserted into heading. My spam filter is turned off!!

It's not Thunderbird doing this. It doesn't modify subject line and it doesn't use the word "spam".

Check with your email provider (possibly your ISP). Or your own anti spam suite.
