I'd like to know how to set which page appears when I open a new tab. I've already set my home page to what I'd like, but I'm having trouble setting which page appears once I open new tabs while I'm already online.

You can configure Firefox to launch more than one page as your home page if that's what you want to do. See How to set the home page

Another way of opening the home page in a new tab is to middle click on the home button in the navigation toolbar.
