My incoming mail server doesn't start with POP3. or IMAP. (it starts mail.), so I can't get past the mail setup wizard.

I want to bypass the mail setup wizard. My incoming server is mail.davidmcgroarty.net. It isn't IMAP.anything or POP3.anything - consequently I can't setup my account, because the wizard only has those two options. (Why not just have a freetext field?)

Try setting up the account Offline (File/Offline/Work Offline), then after you select File/New/Existing Mail Account, enter your email and password, click Manual config., and enter the mail server settings for either a POP or IMAP account:

After the account is configured, return to online status by unchecking File/Offline/Work Offline.
