Emoji on Thunderbird 52.5.2 with MS-W10 is not working properly. It shows only by characters i.e. ":-)" but not by icons i.e. ☺. During editing my mail it shows by icons, but when I receive the mail after sending it shows by characters. I am using Japanese version of Thunderbird.
Receiving mail is done by both W10 and iOS, the result is the same.

Thunderbird on iOS?
Regular emoticons are actually sent as character sequences. Some softwares will substitute an image on encountering an appropriate sequence of characters. So what you see is not controlled by the program used to create and send the messages, but by the program used to view them.
Emojis are rather different. You need to be using Unicode and a font that has glyphs for the images. I see penguins from Linux users and cheesy aircraft and luggage symbols from people like expedia.com, so I have evidence that with the right fonts, Thunderbird can render emojis properly.
Does anything else change in the messages as seen in your Sent folder? I wonder if you're getting a conversion to plain text, or if you're experiencing a change in encoding. ISTR there is a setting in Thunderbird to allow or prohibit the use of images for emoticons, but I'm surprised it affects only Sent messages and not messages in the Composition window.

No Thunderbird on iOS. I also read my test mail that I sent to myself on iPad Mail for a test.

By using "face-icons" in the editor of Thunderbird is not working properly but it works fine with face-icons that I copied from this Wikipedia https://is.gd/h4ysX5 This may mean my Thunderbird editor does NOT have Unicode and/or a font that has glyphs for the images.
iOS is a mobile OS designed by Apple and used on iPhone, iPad, and iPod.
Thunderbird is a desktop email client and not designed to work on the above. However, I've heard of the AlwaysonPC app which allegedly is supposed to allow Thunderbird to work on a virtual desktop. Are you creating the original email in Thunderbird on Windows 10 computer? I am assuming yes. Did you use the 'Formatting Bar' icon to insert a smilie face or one the dropdown options? I am assuming yes.
Are you viewing in Plain Text or HTML ? select received email. 'Menu icon' > 'View' > 'Message Body as' > 'Original HTML'
checking the various stages: Click on 'Write' create email using one of the smilie faces from drop down. Save email as draft and then view the draft: Q : Do you still see the smilie face or has it changed to character sequences :) After sending, click on 'Sent' folder and select the email: Q : Do you still see the smilie face or has it changed to character sequences :)
