I don't know about an icon, but you could easily create a template -- i.e. a message addressed to a specific recipient, with or without content as you choose. To activate the template you would have to double-click it it, which is a bit more than 'just one click', but not much! :-) Instructions are here: http://kb.mozillazine.org/Thunderbird_:_FAQs_:_Using_Templates
