Why, every time I re-open Foxfire, do I have to re-set my preferences? They never save.

Every time I open Foxfire, I get the message at the bottom " Firefox automatically sends some data.... Choose what I share". And every time I choose. Why does it not just save it forever? And same with options - every time I have to reset my preferences? INCREDIBLY ANNOYING

There is software like Advanced SystemCare with its Surfing Protection feature that can protect files in the Firefox profile folder against changes. If you have such software then check the settings or uninstall this software.

(For the record) There's a blocklist entry from October 2014 for the Advanced SystemCare Surfing Protection add-on. For details, see Bug 963776 - Blocklist Advanced SystemCare Surfing Protection add-on (read Bugzilla Etiquette before commenting in bug reports)
