How do I stop Thunderbird from doing automatic updates?

Several computers in the company have automatically updated to v78.2.2 of Thunderbird even though they are setup under options to allow us to determine when to do the updates, and now those machines cannot connect to the IMAP server any more. I have attempted deleting and reloading the account information, but we still get errors.

Our company cannot afford to be having email issues!

If it helps, most of the machines were on v68.12.0.
