how do I get rid of quantum and restore old version
I made the mistake of upgrading to quantum and it broke just about all of my customization. I hate it and want the old version back. I tried downloading an older version and restoring an old profile but it didn't work. Is there any way to undo the damage that quantum did?
This is the price I pay for violating my rule: "Never ever update a mozilla product!"

How did it not work?
First, Type about:preferences#advanced<enter> in the address bar. Under Advanced, Select Update.
[v56+] Type about:preferences#general<enter> in the address bar. Select Update.
Select Never Check For Updates.
Also turn off Use a background service to install updates
Install Older Version Of Firefox {web link} Be sure to read everything here.
If you still want to downgrade, look under; I still want to downgrade. Click the Directory of other versions and languages link. Look for the directory of the version that you want. But, remember that old versions may have security issues.

I'm not sure I understand the question. I want to go back to the old version because it worked much better than quantum. quantum is faster but broke my plugins and extensions and discarded all of my customization. So far, there are no replacements for the things it broke, and many will not or cannot be adapted to this pile of garbage mozilla released.
If you mean what have I tried so far, I restored an old profile to quantum, which didn't help, I downloaded ESP, which will require require recustomizing everything and didn't take the old profile, and downloaded 55.5.2, which I'm using now. It will also require customizing.
So are you asking a question or need help as it seems just back to deride Firefox 57+ instead of asking questions and solutions.

You want customize well you might be over your head but this is the info would have provided in no order : https://www.accessfirefox.org/Theme-Font-Size-Changer.php https://www.accessfirefox.org/Firefox_Accessibility_Themes.php https://www.userchrome.org/what-is-userchrome-css.html https://www.userchrome.org/ https://www.howtogeek.com/334716/how-to-customize-firefoxs-user-interface-with-userchrome.css/ https://github.com/axydavid/FirefoxUI/blob/master/README.md https://github.com/wilfredwee/photon-australis Note there is a sub Reddit dedicated to this. All code is not in one Place, It may be possible to adapt some Chrome Themes or parts of them.

I guess we will not be hearing from you then as you have everything under control now.

Sorry to have pushed your buttons. I thought I did ask a question -- how do I get rid of quantum. But that link you provided was an eye-opener, and I thank you. I had no idea that firefox was so far behind Chrome. I'd fiddled with Chrome, but didn't think it was worth customizing enough to get it to feel as comfortable as firefox. But if even Mozilla says that Chrome has more extensions, and says that quantum now only has managed to match Chrome in speed ... I guess it really is finally time to sell out to google and make the switch. Again, thanks for the link.

You're right about that. I've been resisting this for at least two years. Have a good evening, and I'm sorry I seem to have ruined your day.

I believe FredMcD's post answered your question about reverting changes.
